A Philippine Dish: Batchoy

If you are in Iloilo, it is a mortal sin not to try this Philippine dish: batchoy.

It gives your tastebuds a roller-coaster ride especially if you put in a generous amount of pepper, and an ample amount of vinegar. Some would like to add calamansi to it, some honey, and I think the list is limitless depending on your creativity or your willingness to experiment. Hahaha. The basic ingredients of  batchoy are: miswa, pork, pork liver, water, spices, grounded chicharon, and other appliances such as t.v., radio, washing machine, oh stop right there. I lost track of what I was enumerating. Well the ingredients vary too, as some would like to add shrimp paste, chicken, or other protein rich food to supplement the ‘heaviness’ of the dish. So as to make the meal complete with the staple and viand.

The bitterness of the pork’s liver gets moderated with some sweetening (perhaps sugar) being thrown in. The miswa shouldn’t be over cooked or under cooked, so it wouldn’t be very soft or very hard. Otherwise, customers would grumble why they’re eating something like lugaw, or something like strands of nylons. I did try eating noodles one time that I felt indigestible, but that’s another story.

A Philippine dish isn’t one if it has no spices in it. But, onions and garlic should be added in just the right amount otherwise the taste gets over-ridden by those strong flavors.

Eating it with pandesal for me would be perfect, it substitutes your regular rice and not as heavy in carbo. Or so I think.

The first days in Ilo-ilo were dedicated to goofing around Guimaras, and visiting an awesome resort in Guimaras. After getting tired and needing some invigoration, we were hungry. In the spirit of eating what’s unique in Iloilo, we landed at Ted’s Batchoy – a franchise chain that can be found anywhere in the Philippines. How’s that for looking uniquely Iloilo? Anyway, at least we’ve tried Ted’s Batchoy in its hometown. (Ok don’t accuse me of sour-graping).

Where to go for a hot and hearty meal (labi na sa mga palahubog nga dapat mahuwasan. hahaha)

If I’d go back to Ilo-ilo, (or more likely Guimaras), I’d sample the batchoys in Lapaz or wherever the locals would point me to the place where I can have the best tasting batchoys in the whole of Iloilo. Do you have any idea where?

    my father is from bacolod and he likes to prepare a lot of batchoy at home. one comment on the ingredients, though… i think “pansit miki” is used instead of “miswa” because i think miswa is the thinner and flimsier white noodles that easily break when mixed with water. :)

    but yes, batchoy is definitely a really good dish..

    yup. they always say Lapaz Batchoy is the best in Iloilo though I’ve never been there so can’t give you any recommendations at all. :P

    I tried Ted’s batchoy back in Bacolod. it’s delicious especially on rainy days. :D
